The Satake Satoru Deba is a classic, robust Japanese kitchen knife designed specifically for processing and filleting fish. Its 16 cm long, thick, single-beveled blade enables precise cuts while preserving the structure of the fish meat. In Japan, it is also commonly used for cutting poultry.
Note: This is not a cleaver, so avoid strong impacts. For cutting through bones, a slight pressure on the back of the blade is sufficient to perform a fast, accurate cut. The sharp tip and short blade provide excellent control, which is especially beneficial in tight spaces.
What Does "Deba" Mean?
The word "Deba" (出刃) means "to cut outward," referring to its specialized purpose. The history of Deba knives dates back to the Kamakura period (1185–1333), and for centuries, they have been essential tools in Japanese fish markets and home kitchens.
