The santoku (三徳) knife traces its origins to Japan’s Showa era (1926–1989). Changing dietary habits, increased red-meat consumption and Western culinary influences led to adaptations in Japanese kitchen knives. The santoku evolved from the bunka, combining features of gyuto (meat) and nakiri (vegetable) knives.

The nakiri (literally “vegetable cutter”) dates back to the 17th-century Edo period. Its straight edge is ideal for precise vegetable cuts.
