The Satake Sword Smith Deba is a traditional Japanese fish filleting knife specifically designed for processing fish, filleting, and boning. The 16 cm long, thick blade is made with a single bevel edge, designed for right-handed use. Its robust design allows for precise, yet powerful cuts: it effortlessly slices through fish bones while keeping the meat intact. The shorter blade and wide design provide excellent control, especially in narrow cutting situations. In Japan, it is also commonly used for cutting poultry, but it should not be used as a cleaver – to cut through bones, simply apply light pressure to the back of the blade.
The blade is made from high-quality AUS-8A stainless steel, with a hardness of 56–58 HRC, ensuring long-lasting sharpness and corrosion resistance. The slip-resistant polypropylene handle offers an ergonomic grip, making it comfortable for extended use.
